HOW TO MAKE CHICKEN BIRYANI


Welcome to my kitchen, today we will make Chicken Biryani, chicken biryani is one of the most royal delicacies, it is made on a special occasion.  Succulent,  juicy pieces of chicken are cooked in a yogurt marinade and then layered with crispy onions, coriander, mint, and basmati rice to give you a dish that the entire family will enjoy. chicken biryani recipe can make in a pressure cooker or pot.

Marination Ingredients for chicken biryani



½ kg of chicken
3 tablespoon curd or plain yogurt
1 forth tablespoon ginger garlic paste
Salt as needed
¼ tablespoon turmeric powder
½ to1 tablespoon red chili powder
½ to 1 tablespoon Garam masala or biryani masala
1 tablespoon lemon juice (it’s optional)
1to 4 tablespoon Vegetable Oil or butter.

Method of Marination: Chicken Biryani gets a lot of its flavor from the marinade. We use yogurt, fried onions (birista), tomato puree, chili powder, turmeric powder, coriander powder, garam masala and salt to give a better flavor to the chicken. It’s important to marinate the chicken for at least two hours or overnight for the maximum flavor
To marinate the chicken for the biryani, combine the vegetable oil, garlic ginger pest, chili powder, turmeric powder,  garam masala, curd and salt in a large bowl and stir together. Mix well the chicken pieces and toss together making sure the chicken is thoroughly coated in the marinade. cover and keep aside for 1 hour.  also, wash basmati rice to a large pot. Soke it for 30 mins.

Now we will make chicken first.

Step 1:- First, heat ghee or oil in pressure cooker or pot

Step 2:- saute  whatever spices  you have like bay leaf, cardamoms, cloves, cinnamon, star anise, shahi jeera  and mace for a minute.

Step 3:-fry onions evenly stirring often  until light brown 

Step 4:- put marinate chicken for 5 mins. lower the flame completely. 
Cover and cook until the chicken is soft and completely cooked.

Step 5:- Check if the chicken is cooked. At this stage should not moisture left in the cooker.

Step 6:- check the salt if needed then add. Also add 4 tablespoon curd,1/4 tsp chili powder, green chili, mint, and biryani masala. if you are cooking for your kids then you can skip chili powder.

Method of layering for chicken biryani


Step 1:- Mix everything well and layer chicken evenly at the bottom. Spread it evenly in a single layer.

Step 2:- Spread a layer of rice over the chicken

Step 3:- Pour 3 cups of this water and thin coconut milk to a bowl. add 1/2 to 3/4 tsp salt and mix. taste the water it must be slightly salty.

Step 4:- Pour 2 cup of this water across the sides of the cooker or pot.

Step 5:- Now Pour 1 cup of water on top of the rice. sprinkle mint and fried onion over.

Step 6:- Finally set the flame to medium-high.  Cover and cook 1 whistle.  If cooking in a pot, cook until the rice is done completely.

Step 7:- When the pressure goes down, open the lid, gently fluff up the chicken biryani with a fork.

Serve chicken biryani in layers. Top layer with rice and bottom layer with chicken. enjoy with raita, sliced veggies and paped.
