Banana Chips


Welcome to my kitchen, Today we will make Banana chips. it is a popular snack in South India and is typically made as munching evening snack or as compliment savory snack with desserts. This is the perfect snack for a healthy and Little hunger. Since Nowadays available Banana in the Market. So why not try it at home and enjoy eating. it is a very simple recipe. you can make it easy to make and store. When a guest suddenly arrives, you can serve these homemade snacks. so let's start to make Banana chips.

Ingredients for Banana chips

  • 2-3 large raw banana
  • Salt to taste
  • ½ tsp turmeric
  • Water
  • coconut oil, for frying



Making Banana Chips

Step 1:- First, peel the raw banana skin. and cut the banana. grease the hand with oil if it turns sticky. and then peel and cut

Step 2:- Banana slice should to medium thickness and equal size.

Step 3:- Put the banana slices in water, salt, and turmeric solution and let sit for 5 minutes.

Step 4:- Now drain off the water completely.

Step 5:- Heat coconut oil in a kadhai; once oil is hot, reduce the heat to medium. To find out if the oil is hot enough, drop a small piece of sliced plantain into the oil, if it raises to the surface immediately, then the oil is hot enough for frying.

Step 6:- Now Immediately drop it into the oil, separating the pieces.

Step 7:- Stir continuously and fry on medium flame.

Step 8:- Fry for 10-12 minutes or until it turns crisp and golden brown.

Step 9:- Remove the chips with a slotted ladle and place them in a paper towel to drain off excess oil if any.

Step 10:- Sprinkle salt and chili powder and let it cool.

Step 11:- You can store it in an air-tight container for up to a week.

Spring roll



Welcome to my kitchen, Today we will make spring roll. Spring roll is popular in India that is now available in roadside eateries and restaurants too. but you can't go outside due to Lockdown. don't worry, today we will make spring roll at home. it is very easy to make. Spring roll is a perfect tea snack for a weekend brunch. it is favorite to all age groups. At this time the children are also at home. So you must try it and enjoy eating with children. so let's go and make spring roll.

Ingredients of a sheet for spring roll

  • 2 cup white flour (Maida)
  • 2 tablespoon oil
  • Salt to taste
  • Water

Ingredients for stuffing for spring roll

  • Oil- 1-2 tablespoon
  • Finely chopped garlic – 2 tablespoon
  • Finely chopped ginger- 1 tablespoon
  • ½ cup boiled Hakka noodles
  • Shredded cabbage -1 cup
  • 1-2 Capsicum cut into sliced
  • 1 Medium size onion cut into sliced
  • Carrot -1/2 cup grated
  • 2 tsp schezwan sauce
  • 1tsp tomato ketchup
  • Salt to taste

Ingredients for Sealing Paste

  • 1/4 cup all purpose flour or corn starch
  • 4 to 5 tablespoon water or add as required to make a thick paste

Other Ingredients

  • Oil for deep frying

Making Sheet

Step 1:- Take 2 cup white flour, 1spoon salt and 2 spoon oil in a large bowl.

Step 2:- Rub all ingredients with your fingertips. and mix very well.

Step 3:- Add water and prepare a flexible and soft dough. and apply some light oil in the dough and cover the dough and let it rest for 10-15 minutes.

Step 4:- Divide the dough into equal portions and roll each portion into a small lemon shape. make sure all roll should evenly rollout

Step 5:- Take 1/2 cup dry white flour on a small plate. Take one roll and Sprinkle some dry flour over it. and Roll it out into a diameter of 4-6 inches with the help of a rolling board.

Step 6:- Make at least 3 rotis in this way. all rotis should be equal size.

Step 7:- Now take one roti and apply oil well on top of it. Then sprinkle a little dry flour and put the second roti on top of it. repeat the same process and put the third roti on top of it.

Step 8:- Now keep it in surface and sprinkle dry flour and roll it out with light hands.

Step 9:- make a very thin flatten disk. keep reminding you to have to make a flatten disk without any wrinkle.

Step 10:- Now heat the Tawa and lightly roast the roti on both sides. do not overcook.

Step 11:- Now when the spring roll's sheet will cool down. then separate to all sheets very carefully. now your spring roll's sheet is ready.

Making Stuffing

Step 1:- Firstly, Heat 2 tbsp oil in Kadai. and add finely chopped ginger and garlic.also add finely chopped spring onions.

Step 2:- Cook them for a minute or till the raw smell disappears.

Step 3:-  Now add capsicum, saute them for a half cook. furthermore, add shredded carrot, cabbage, and noodles. and cook them, while stirring.

Step 4:- Switch off the gas flame, and add schezwan sauce, tomato ketchup, and salt. mix well and keep aside.

Making Sealing Paste

Step 1:- In a bowl, mix 1/4 cup all-purpose flour or corn starch and 4 to 5 tbsp water.

Step 2:- Now make a thick paste without any lumps.



Making Sprig roll

Step 1:- Now take the spring roll sheet. you can take also ready mate sheet. it is easily available in the market.

Step 2:- Now apply the paste on the edges of the sheet. Then place 1 tbsp of the veggie stuffing on one side.

Step 3:- Pull tightly at the corner until the half sheet is reached and bend.

Step 4:- Roll slowly but tightly roll till the end.

Step 5:- At last, apply maida paste around the corners and seal the edges.

Step 6:- Now heat the oil for deep frying

Step 7:- On the size of the pan or Kadai slide a spring roll One by one.

Step 8:- Once they become light golden, turn them over and fry the other side.

Step 9:- Fry till they are crisp and golden.

Step 10:- Once they turn golden brown, drain them over absorbent paper.

 

Now serve crispy veg spring rolls hot with sweet chili sauce or tomato sauce.

Modak Recipe


Welcome to my kitchen, Today we will make Modak. Since the  Ganesh Chaturthi is close by. and Modak is Bhagwan Ganesha’s favorite sweet and made in many Hindu homes during the first day of the Ganesh Chaturthi Festival. Modak is Maharashtrian dish dumpling made of rice flour dough and sweet coconut and jaggery. Ganapathi festival is always incomplete without the traditional sweet dish Modak recipe. Modak can be made in 2 ways. First with mould and second by shaping hands. it is very easy to make. if you never make this. so definitely try in this Ganesh Chaturthi. so let's start to make.

Ingredients for the dough of Modak Covering

  • 150-200 grams of rice flour
  • Water as required
  • ¼ teaspoon ghee or oil
  • Salt as per taste

Ingredients for sweet stuffing Of Modak

  • Fresh grated coconut -100 grams
  • powdered or grated jaggery-  200 grams 
  • 6 to 7 green cardamoms, make a powdered
  • ¼ teaspoon
  • grated nutmeg or ground nutmeg powder (it is optional)
  • ½ teaspoon poppy seeds – it is optional
  • ½ teaspoon ghee or oil

Making Sweet Stuffing

Step 1:- Firstly heat ghee in a pan on low flame. Add poppy seeds.  Fry till the poppy seeds start crackling.

Step 2:- Then add grated fresh coconut, jaggery, cardamom powder, and grated nutmeg. Mix well and cook this coconut-jaggery mixture on a low flame.

Step 3:-  When the jaggery becomes melt. then cook this mixture for 9 to 10 minutes till the moisture from the jaggery begins to dry.

Step 4:- When the mixture turns thick, switch off the flame. Do not overcook, otherwise, the jaggery will harden. turn off the gas stove and cool this mixture completely. On cooling, the mixture will thicken more.

Making Dough

Step 1:- Bring one cup of water to a rolling boil with ghee and salt.

Step 2:- Reduce the flame and add the rice flour and give a good mix. stir continuously and mix the flour with the water.

Step 3:- When the rice flour comes to mix well with water. turn off the stove and cover the pot. Remove the pan from the stove and rest until the temperature comes down.

Step 4:- Now transfer all the flour to a large plate or thali or bowl. Gather the flour together and start kneading it.

Step 5:- Knead the dough very well. If your dough becomes dense or hard or dry, then add a few tablespoons of hot water and keep kneading.

Step 6:- Divided the dough and make the equal small size balls without any cracks.

Step 7:- Keep the balls covered with a kitchen towel. The balls should be smooth in appearance and should not have any cracks.


Making Modak

Step 1:-. Take a ball and flatten it with your fingers to a round disc or make a bowl shape. and place the sweet mixture stuffing in the center. You can apply ghee or oil to your palms while making Modak.

Step 2:- Bring together all the edges and join them on the top. Remove the extra portion of the dough from the top.

Step 3:- Shape and taper the top of the Modak with your fingers.

Step 4:- If you are using the mould. then grease the Modak mould with a bit of ghee or oil. close the mould and keep a dough ball inside the mould and press it so that space is made. Place the sweet stuffing.

Step 5:- Cover the floor with a small piece of flour. Seal the Modak, press and smooth it.

Step 6:- Now open the Modak mould. Remove the Modak gently from the mould. make all Modak in this way. and keep all Modak covered with a napkin so that the rice dough does not dry out.

Steaming  Modak

Step 1:- For the steaming firstly grease a steamer pan with oil or ghee. and Place the prepare Modak leaving a little space between each of them.

Step 2:- Take 2 to 3 cups water in a pot. place a trivet in a steamer or pot. Heat the water on high flame until begins to boil. 

Step 3:- When the water becomes hot or boiling then place the Modak pot.

Step 4:- Cover the pan and steam Modak for 10 to 15 minutes on a medium-low flame.

Pour few drops of ghee over the Modaks and offer them of Lord Ganesha.

Burger Recipe

 

Welcome to my kitchen, Today we will make a burger at home. You want to eat street food but you don't want to go outside due to coronavirus. so don’t t worry friend, today we will make a burger at home in an easy way, which will get the same taste as street food. Tikki is made from boiled potatoes and with some Indian spices and lemon juice. If you want you can add shredded carrot or boiled and mashed green beans and green peas, corn, or other veggies of your choice. it is easy to make at home. when you want to eat some street food then you can make it and enjoy to eat. so don't be late and see how to make aloo Tikki burger at home. 

Ingredients for  Potato Tikki

  • 2 medium-sized potatoes, boiled & mashed
  • ¼ tsp turmeric / Haldi
  • ¼ teaspoon red Kashmiri chili powder
  • ½ teaspoon coriander powder
  • ½ teaspoon cumin powder
  • ¼ tsp pepper, crushed
  • ½ tsp ginger garlic paste
  • 1 teaspoon chaat masala
  • 1.5 tablespoon rice flour or cornflour (corn starch)
  • Oil for deep frying
  • Salt to taste

Ingredients for Buns & The Toppings

  • 4 to 5 burger buns
  • 1 small tomato - thinly sliced
  • 1 small onion - thinly sliced
  • 4 to 5 lettuce leaves, chopped
  • Coriander chutney as required
  • Tamarind dates sweet chutney
  • Chaat masala as required
  • Some butter for applying on the buns

First, make Potato Patties

Step 1:- Firstly, peel and mash the boiled potatoes.

Step 2:- Now add all the spice powders and ginger garlic paste and salt and mix well.

Step 3:- Now add the rice flour or cornflour in the mixture and again mix well.

Step 4:- Make a shape into round patties,  and deep fry in hot oil. You can use the griddle or pan to fry the Tikkis

Step 5:- fry the Tikkis till they are crisp and golden from both sided.

 

Now we will make the Aloo Tikki Burger

Step 1:- Slice the burger buns and fry it in some oil or butter until lightly crisp.

Step 2:- Cut half the burger bun and apply the prepared Tamarind dates sweet chutney or coriander chutney on both sides. Apply some butter first before applying the chutney.

Step 3:- Now place the Tikki/patties on the slice.

Step 4:- Place on the top of Tikki, lettuce leaves, and sprinkled some chaat masala. and place 2 slice of tomato and 2 rings of onion.

Step 5:- Cover with burger bun and press slightly. you can also Insert a toothpick on the burger.

Aloo Tikki burger is ready to serve. you can serve it with french fries, coriander chutney or tomato sauce.

Aloo Paneer Cutlet

 

Welcome to my kitchen, Today we will make Potato and Paneer Cutlets.  it is too crispy, healthy and delicious north Indian snack recipe. which is made with grated paneer and boiled potatoes.  Potato and Paneer Cutlets is an Indian version of cutlets and is quite easy-to-make at home. you can make as evening snacks or appetizers on occasions like kitty parties, game nights, or birthdays. when you want to eat something different. then you can try it. so let's come, how to make it.

Ingredients for aloo mixture

  • 2 medium-size potato, boiled & mashed
  • 1-2 chili, finely chopped
  • ½ tsp ginger garlic paste
  • 2 tbsp coriander, finely chopped
  • ¼ cup cornflour
  • Salt to taste

Ingredients for make Batter

  • Ingredients for Paneer Stuffing: 
  • 1-1/2 cup paneer, grated
  • ½ tsp ginger garlic paste
  • ½ tsp Kashmiri red chili powder
  • ¼ tsp cumin powder
  • ½ tsp chaat masala
  • 1-2 tbsp coriander, finely chopped
  • 1-2 tbsp mint/pudina, finely chopped
  • Salt to taste
  • oil for roasting 

Aloo Paneer Cutlets Recipe

Step 1:- Take in 2 potatoes in a large bowl. and mash them.

Step 2:- Now add 1-2 chili finely chopped, ½ tsp ginger garlic paste, 2 tbsp coriander finely chopped, ¼ cup cornflour, and salt to taste. and mix well. and prepare a smooth dough

Step 3:- Now take in another bowl  1¼ cup paneer.

Step 4:- And add ½ tsp ginger garlic paste, ½ tsp chili powder, ½ tsp cumin powder, ½ tsp chaat masala. add 2 tbsp chopped coriander, 2 tbsp chopped mint, and salt to taste. and mix well

Step 5:- Now grease your hand with oil. and take a ball sized potato (aloo) mixture.

Step 6:- Now grease your hand with oil. and take a ball sized potato (aloo) mixture. and make a flattened disk. make sure there is enough space for stuffing.

Step 7:- Now place a small ball-shaped paneer mixture in the center.

Step 8:- Now seal the stuffing well.  and give a shape of your choice. you can make round flatten. or square flatten.

Step 9:- Now heat the oil in a pan on a medium flame for shallow fry.

Step 10:- When the oil will become hot. then shallow fry the flattened disk.

Step 11:-  Fry both sides until it turns golden brown and crisp.

Now your aloo paneer cutlets are ready to serve. Serve your crispy aloo paneer cutlets with tomato sauce and green chutney.
