Sabudana Khichdi

 


Welcome to my kitchen, Today we will make Sabudana khichdi. Sabudana khichdi is usually made during fasting days like Navaratri or Mahashivratri or Ekadashi. It is an easy snack and a good recipe to be made on fasting days. Since Navratri is going to start soon. so you can make it and enjoy to eat your Navratri fast. In Navratri, we keep fasting for nine days. And every day we feel like eating something different. so try to make it in your fasting days. so let's start to make

Ingredients for Sabudana khichdi

  • 1 cup tapioca pearls (sabudana)
  • 2 medium-sized potatoes
  • 1 teaspoon cumin
  • 1 teaspoon grated ginger - optional
  • 1 green chili - chopped
  • ½ cup roasted peanuts
  • 8 to 10 curry leaves - it is optional if you do not use in fast then skip.
  • ¼ cup grated fresh coconut (optional)
  • ½ to 1 teaspoon sugar or as required
  • ½ to 1 teaspoon lemon juice or as required (optional)
  • 3 tablespoon peanut oil or ghee
  • rock salt (sendha namak)



Making Sabudana Khichdi

Step 1:- Wash sabudana very well in water. Then soak sabudana for 4 to 5 hours or overnight.

Step 2:- Next day, drain their water and keep aside in a bowl.

Step 3:- After that, boil the potatoes and peel and chop them.

Step 4:- Fry the dry the peanuts in a pan till they turn brown and when cooled make a coarse powder paste in a grinder.

Step 5:- Now Mix the peanuts powdered, salt, and sugar with the drained sabudana.

Step 6:- Now heat the ghee.  and add the cumin first.

Step 7:- When the cumin has cracked, Now add the curry leaves and green chilies. and  Fry for a few seconds and then add the grated ginger. you can use only those things which are used on your fast day. otherwise, skip it

Step 8:- Fry for a few seconds until the raw smell of ginger goes out. Now add chopped boiled potatoes and fry for a minute.

Step 9:- Now add sabudana and stir it for 5-6 minutes and fry

Step 10:- When the sabudana starts becoming translucent it means they are cooked. switch off the gas.  and add lemon juice and chopped coriander leaves. Mix well.

Step 11:- Before serving for garnish You can even add some grated fresh coconut on top.

Now your hot sabudana khichdi is ready, enjoy to eat it your fast day

Pizza Sauce

 


Welcome to my kitchen, Today we will homemade pizza sauce. pizza sauce is a tomato-based sauce prepared by blanching tomatoes and spiced with herbs and garlic. it is very easy to make at home. you can store it in an airtight container. and can use it when you required it. This pizza sauce is made with fresh tomatoes, garlic, and basil. Homemade pizza sauce's taste and flavor are always better. than any other store sauce. Apart from pizza, you can use the sauce with pasta. so let's start to make.

Ingredients for Pizza Sauce

  • 6 red tomatoes
  • 3-4 cloves garlic, finely chopped
  • ¼ onion, finely chopped
  • 2 tbsp basil leaves, finely chopped
  • ¾ tsp sugar
  • ½ tsp oregano
  • ¼ tsp chili flakes
  • ¾ tsp Kashmiri red chili powder or according to your taste
  • salt to taste
  • 1 tbsp tomato sauce
  • 1/2 tsp butter
  • 2-3 tsp oil

Making Pizza Sauce

Step 1:- To make pizza sauce, make cross-crosses on the tomato base and keep them in boiling water for 2 to 3 minutes or until the skin peels off.

Step 2:- After that, peel the skin of tomatoes once they cooled completely.

Step 3:- Then roughly chop them and blend in a mixer to make a smooth pulp. and transfer the smooth paste into the plate and keep aside.



Step 4:- Remove the seeds and chop 3 tomatoes Separately.

Step 5:- Heat the oil in a nonstick Tava or heavy-bottomed pan.

Step 6:- Add chopped garlic and cook them for a few seconds.

Step 7:- Now add chopped onions and saute on a medium flame till they change color.

Step 8:- Then add chopped tomatoes and cook completely.

Step 9:- Cook it while stirring so that it melts soon.

Step 10:- Add the prepared tomato puree as well. and cook them

Step 11:- Now, mix well and add basil, sugar, chili powder, parsley, chili flakes, and salt.

Step 12:- Mix well, cover, and simmer the sauce for at least 5 minutes or till the sauce turns thick.

Step 13:- Also add tomato sauce and butter. and mix very well

Now your sauce is ready. you can store it in airtight container. and use can as required.

Rava dosa recipe

 


Welcome to my kitchen, Today we will make Rava dosa at home. Making Rava dosa is very easy and the best part is that no grinding or fermentation is required. You can make it instantly with only a handful of ingredients. Rava dosa is a South Indian breakfast made with semolina, maida, rice flour, chopped onion and green chilis, and some other ingredients. This is a very quick recipe. Making the batter for this dosa is super easy, you only have to mix everything together and then let it rest for 20 to 30 minutes, and then you can make the dosa. you can make it easier when you want to eat. time of breakfast or lunch. you can serve it with tomato chutney or coconut chutney. so let's start to make.

Ingredients for Rava dosa

  • ½ cup unroasted fine Rava (semolina)
  • ½ cup of rice flour
  • ¼ cup all-purpose flour (maida)
  • 1 medium-sized onion finely chopped
  • 2 to 3 green chilies, chopped
  • ½ inch ginger, finely chopped
  • 8 to 10 curry leaves, chopped
  • Some chopped coriander leaves
  • ½ teaspoon crushed black
  • ½ teaspoon cumin seeds
  • Water or add as required
  • Salt to taste
  • oil or ghee for cooking Rava dosa

Making Batter for dosa

Step 1:- Take a large size bowl and add Take ½ cup uncooked Rava, 1/2 flour cup rice flour and 1/4 cup maida.

Step 2:- Now add chopped onions,  chopped green chilies, and chopped ginger.

Step 3:- After that add ½ tsp crushed black pepper, ½ tsp cumin, chopped curry leaves, and salt as required.

Step 4:- Add water. And whisk until smooth without any lumps. And make a thin and smooth solution

Step 5:- If the batter feels thick or has a medium consistency, then you can add more water. If the batter looks too thin, then you can add rice flour.

Step 6:- Cover and let the dosa batter rest for 20 to 30 minutes.



Making dosa

Step 1:- Firstly, before make dosas, mix the batter very well. and then heat the Tawa. spread some oil on the Tawa.

Step 2:- Now with the help of a ladle, pour the dosa batter over very hot Tawa carefully. Begin at the edges and move towards the center.

Step 3:- When cooked upwards, then sprinkle 1 tsp of oil with oil on the top and sides.

Step 4:- On a low to medium flame, cook until the dosa turns golden and crisp. You can even cook both sides if you want.

Step 5:- Finally, fold the dosa and serve Rava dosa immediately with tomato chutney or coconut chutney.

Naan Recipe

 



Welcome to my kitchen, Today we will make Naan. learn to make delicious, soft, and fluffy butter naan at home with the help of this detailed step by step method. Naan is mostly cooked in a tandoor. but today we will make in gas stove and Tawa. Anyway, since the Lockdown has started, the restaurant food we miss. Naan with shahi paneer and raita. I think all people are missing this restaurant delicious food. So why don't we make naan at home today? and enjoy eating with family. so let's start to make Naan

Ingredients for Butter Naan

  • 1 cup wheat flour and 1cup all-purpose flour
  • 2 tablespoon oil or melted butter
  • ¼ cup lukewarm milk
  • ½ cup plain yogurt
  • Salt to taste
  • 2 tablespoon sugar
  • 1teaspoon grated garlic (it is optional, you can skip it)

Ingredients for instant  yeast   

  • ½ teaspoon baking powder and
  • ¼ teaspoon baking soda.

Ingredients for garnish on the top

  • 2-3 tablespoon butter (melted)
  • ¼ cup coriander leaves finely chopped
  • ¼ cup kalonji seeds (it is optional, if you have not available then skip it)
  • 4-5 garlic finely chopped



Making dough

Step 1:- Take a large size bowl to add flour, baking soda and baking powder, sugar, and grated garlic. (if you are using instant yeast in place of baking powder or soda then add it this time) mix it well

Step 2:- Now add yogurt, oil, and 4-5 tbsp lukewarm milk.  and make a smooth dough. you can be adding more milk as needed.

Step 3:- Knead well until the dough becomes soft, elastic, and flexible. When you press the dough with your finger, it should be baked slowly.

Step 4:- Now, cover the dough in a warm place for 1 to 2 hours.

Step 5:- You lubricate the fingers and divide the dough into 7-8 portions.

Step 6:- Make smooth balls and keep them covered until you finish rolling the naan.

Making Naan

Step 1:- Now take a dough ball and sprinkle a little flour on the flat area or rolling area and place a dough ball. and roll it.

Step 2:- Roll the ball 8-9 inches long and 4 to 5 inches.

Step 3:- Now sprinkle kalonji seeds, chopped garlic, and coriander leaves on the top of the naan. and roll them gently.

Step 4:- Now prepare the same way of 5-6 naans. and heat a griddle or pan on the other side.

Step 5:- When the pan is hot enough, transfer the naan to it. Bubbles will appear within a minute or at the top.

Step 6:- Now, flip it over and cook either on a pan or directly on a gas fire or stove. Or place a wired rack on the stove and toast it.

Step 7:- When brown spots started appearing on the naan. remove them to a plate and brush with some butter.

Step 8:- Now nan is ready to serve. you can serve naan right away with paneer butter masala, dal makhani, palak paneer, and raita.
