How to make Paneer Changezi


Welcome to my kitchen, today we will make Paneer Changezi.
You must have eaten a lot of paneer dishes. like, paneer butter masala, Kadai paneer, shahi paneer, chili paneer, matar paneer. but today we will make paneer changezi.  yes it is little bit different but it is too tasty to eat. 

Paneer Changezi

  
Ingredients To Marinate Paneer
  • 300 Gms Paneer
  • 1 tsp Ginger Garlic Paste
  • 1 tsp Chaat Masala
  • 1/2 tsp Turmeric Powder/Haldi Powder
  • 1 Tbsp Oil
  • 2 Tbsp Curd
  • 2 Tsp Besan
  • Salt


Ingredients To Make Gravy:
  • 3 Onions
  • 3 Tomatoes
  • 1/4th Cup Curd
  • 1/4th Cup Desi Ghee
  • 1 tsp Salt
  • 1/2 tsp Garam Masala
  • 1/4 tsp Javitri
  • 1/4 tsp Jayphal
  • 1 tsp Kasuri Methi
  • 5 tsp Coriander Powder
  • 1/2 tsp Red Chilli Powder
  • 1/2 tsp Haldi Powder
  • 3/4 tsp Roasted Cumin Powder
  • 2 tsp Kashmiri Red Chilli Powder
  • 10-12 Cashew nuts 

Whole spice for Mix in paste masala
  • 2 Dried Red Chillies
  • 4 Green Cardamom
  • 4 Laung or Cloves
  • 4 Black PepperCorns
  • 1 Black Cardamom or Badi Elachi
  • 1 Tej Patta

Step 1:- First we will take fresh paneer and cut into large cube size shape.

Step 2:- In a bowl add paneer, 2tbsp curd, 2 tsp gram flour, 1tsp ginger garlic paste, 1tsp chaat masala,1/2 tsp turmeric and little bit salt,1tbsp oil and mix it well. Marinate and keep for 15 mint.

Step 3:- After 15 min, first we will cook the marinated paneer.

Step 4:- Heat 1tsp oil on the pan and add one by one all paneer cubes.

Step 5:- roast all paneer from all sides well till 5 mint . and keep aside.

Step 6:- Now Heat 1 tbsp oil in other Kadai. and add 2 dry red chilis, 3-4 green cardamon, 3-4 cloves, 4-5 black pepper, 1black cardamom, chopped onion. and add chopped tomato. and fry 4-5 mint.

Step 7:-Now Add cashew nuts, and fry it for another 4-5 minutes till become light pink.  and Let it cool at the room temperature

Step 8:-Take the cooled onion, tomato and cashew nuts in a grinder and grind it to make a fine paste.

Step 9:- Now heat 3-4 tbsp oil or ghee on the same Kadai. and put 1 bay leaf.

Step 10:-Then add the ground masala paste. and salt according to taste, stirs well.

Step 11:- Now add 1/2 tsp red chili powder, 1/2 tsp turmeric powder, 3/4 tsp roasted cumin powder, 5 tsp coriander powder , 2 tsp Kashmiri red chili powder. Cook the masala over low heat till it starts to release the oil. Stir the spice continuously

Step 12:-When the oil separates from the paste. add ½ tsp garam masala 1/4 tsp Javitri ,1/4 tsp Jayphal and cook few second.  then low the gas flame and add 2 tbsp curd and 1 tbsp cream and 1tsp sugar, and crushed Kasuri methi,  and mix well and stir well.

Step 13:- before mixing the curd, beat the curd in a separate bowl with until smooth.

Step 14:- Now add water  according to gravy's thickness.

Step 15:- Add roasted paneer cubes and cook 2-3 min.

Paneer Changezi is ready to serve. Transfer Paneer Changezi to a bowl. And enjoy eating with jeera rice, chapatti, naan, fulka, and raita.
